Hi, I’m Simone!

With so many fad diets and conflicting information out there, it’s easy to feel lost.  I offer evidence-based science grounded in an intuitive eating framework to heal your gut and free you from unsustainable restriction. At the juncture of mindfulness and science, we will work together to create a healing relationship with both your body and diet.

I’ll share real-world strategies that are feasible and effective, and will keep an open ear and heart to what is most important to you.  I offer expertise in treating adults with gastrointestinal disorders including IBS, SIBO, and IBD. I’m also well-versed in diabetes, heart health, and sustainable weight management. With my signature plant-forward approach, we’ll look towards whole-foods before resorting to pills and supplements. I promise to provide you with no-nonsense science without letting trends, outdated thinking, or my own preferences get in the way.

So what’s my story? I decided to become a dietitian after a previous career in NYC restaurant management, where I developed a love for great food. I enjoyed connecting with people from all walks of life, but there came a time when serving food without regard for health was something I could no longer stomach. I had also put my wellbeing on the back burner. I was exhausted, dehydrated, and stress was manifesting in my gut. Desperate for change, I went back to school to learn as much as I could about nutrition.

I earned my Master’s degree in Clinical Nutrition at New York University and completed my training at Mount Sinai Medical Center in Manhattan.  I became certified in Plant-Based Nutrition from Cornell University and started my own practice. I’ve since worked with esteemed gastroenterologists and completed Monash University’s Low FODMAP training which allows me to provide unique support to those facing GI concerns. Life and love led me out of the city and now I’m based in the mountains of WNC!

When it comes to better health, the steps we take shouldn’t be quick-fixes, unsustainable routines, or overly restrictive rules shaped by diet culture.  The process is just as important as the goal.  Building habits that are both nourishing and sustainable allows us feel good right here and now, but also thrive in the future.
